  Born in the XVth century in Indre-et-Loire, it is in Le Mans in the Sarthe that rillettes expanded by being produced industrially from the XIXth century. Rillettes results from the long cooking of meat cuts in some fatty, with salt, pepper, spices and herbs. The cooking is finish as soon as the fibers of the meat break up that explain the particular texture of rillettes. Goose rillettes are a little bit fatter and softer than the traditional pork rillettes.
